Executive Chef - Azura Memory Care
- Complete all daily food preparation.
- Communicate any special dietary needs with other staff as needed.
- Monitor food preparation and serving, including compliance with company and state guidelines.
- Include residents in food preparation, cooking activities and dining room set up/clean up whenever possible.
- Order food, beverages, and supplies from approved company vendors with approved order guides.
- Monitor and manage inventories and estimate inventory requirements using forecasting techniques and historical data.
- Hire, train, and supervise kitchen personnel.
- Take a hands-on approach with culinary staff, including assisting with:
- Food temperatures
- Food preparation
- Food production
- Monitor and ensure cleaning schedules and infection control procedures are being followed.
- Ensure that PPD budgets are maintained by correct portions of food.
- Date and label all incoming food prior to putting items away.
- Perform monthly food temperatures on all hot and cold food, documenting on proper form.
- Conduct monthly reports.
- Maintain all logs for food and equipment, cleaning, and in-services, as well as OSHA and other compliance logs.
- Monitor the condition of equipment, including temperature and chemical levels in the dishwasher, and schedule repairs as needed.
- Assist with planning and preparation for life enrichment, special events, and activities as requested.
- Maintain an emergency food supply in accordance with regulations.
- Clean all kitchen appliances on a weekly basis.
- Keep a clean, organized kitchen and dining area.
- Sweep and mop all dining and kitchen areas.
- Physical set up of dining room for meals.
- Clear and wash all tables/chairs.
- All other duties as may be assigned
Requirements
Education: High school diploma or equivalent
Experience: Previous experience in a resident care setting a plus.
At least three years in a kitchen position or two years of experience in the production of an institutional food service program
